Excellent with mashed
potatoes and vegan turkey!
Ingredients for Mushroom Gravy:
- 6 mushrooms, sliced
- 1 1/2 Tbs. light olive oil
- 1 1/2 Tbs. flour
- 1/4 tsp. thyme
- 3/4 cup soy milk
- 1/4 cup vegetable broth
- salt to taste (about 1/2 tsp.)
- In a 2-quart saucepan, sauté mushrooms in oil until tender. Reduce heat to low.
- On reduced heat, add flour and thyme. Sauté 3 minutes.
- Add soy milk and vegetable broth. Increase heat to medium.
- Bring to a low boil, stirring frequently.
- Add salt to taste
