Ingredients for "Holiday Turkey":
- 1 gallon water
- 5 cups vital wheat gluten flour
- 1 cup nutritional yeast flakes
- 2 tsp. thyme
- 2 Tbs. onion powder
- 2 Tbs. salt
- 4 cups vegetable broth
- ⅓ cup vegetable oil
- 2 Tbs. soy sauce
- Cheesecloth (one double thick 24-inch by 16-inch piece)
- 4 10-inch pieces of string
- 1 sheet ready-to-bake vegan puff pastry, thawed
- 2 Tbs. ketchup
- 1 Tbs. water
- 1 tsp. thyme
In a large bowl, whisk together the vital wheat
gluten flour, yeast flakes, 2 tsp. thyme, onion
powder, and salt.
Add the vegetable broth, oil, and soy sauce. Stir
just until combined.
Form into a loaf shape.
Place loaf on cheesecloth and roll up (not too tight).
Tie each end with a piece of string and tie two
additional pieces of sting ⅓ in from each end.
Place in low-boiling water.
Cover pot with lid and cook for one hour and 45 minutes.
Remove loaf from water and remove cheesecloth.
Preheat oven to 400 degrees F.
Roll out puff pastry so that it will cover the loaf.
Cover loaf with puff pastry, tucking edges underneath.
Combine the ketchup, water, and one tsp. thyme.
Brush puff pastry with ketchup mixture.
Bake loaf for 25 minutes.
