A great change of pace from your morning oatmeal
Ingredients for Fruity Quinoa:
- ½ cup quinoa
- 1 cup orange juice
- ½ teaspoon cinnamon
- 1 teaspoon alcohol-free vanilla
- 2 Tablespoons currants or unsweetened dried cranberries
- Place quinoa, orange juice, cinnamon and vanilla in a sauce pan and bring to a boil.
- Reduce to simmer, cover and cook 10 – 15 minutes until all of the liquid is absorbed.
- Stir in dried fruit.
