Great with baked potatoes
or vegetables.
Ingredients for “Cheese” Sauce:
- 2 cups soy milk
- 2 Tbs. light olive oil
- 1/4 cup flour
- 1/2 cup yeast flakes
- 1 2-oz. jar pimientos
- 2 Tbs. peanut, almond, or soy butter
- 1/2 tsp. garlic (optional)
- 1/2 tsp. paprika
- 1 1/2 tsp. salt
- In a blender, blend all ingredients, except salt, until smooth.
- Pour sauce into a 3-quart saucepan.
- On medium heat, heat
Variation: NACHO “CHEESE” SAUCE
Increase garlic to 1 teaspoon, substitute chili powder for paprika, and add one 4-oz. can of diced green chilies.
